Basil Dressing

This dressing is for amateur of basil as basil usually displays strong flavor (This recipe is a non oil based dressing).

– ½ cup of basil leaves
– 1 shallot
– 1.5 Tbsp. fish sauce
– 1 fresh lime juice
– 1 tsp. of honey

Finely chop the basil leaves and the shallot. Then add the lime juice, fish sauce, and honey. Very good with spinach, chard, purslane. To balance the basil you can had some cheese (goat cheese) or dried fruit (cranberries) or some nuts (pine nuts).

Thai Style Dressing

This dressing is not oil based and contains lots of taste to surprise your guests:

– 2/3 garlic cloves
– 1 small Thai bird chile
– Juice of 1 or 2  limes
– 3 tablespoons fish sauce (nuocnam)
– 1 teaspoon honey
– 1 minced shallot
– Salt & pepper to taste

Mince the garlic and the Thai bird chile, and mix it with the fish sauce, lime juice and honey. Then Fry the minced shallots until it becomes transparent. Drain and add to the sauce.

Very good with chards, collards, or spinach chopped into a large bowl.
