Citrus Mustard Vinaigrette

What you need:

3 Tbs. extra-virgin olive oil
1Tbs. Mustard (Dijon)
1 squeezed medium size lemon;
Kosher salt and freshly ground black pepper

In a large bowl, whisk 3 Tbs. of the oil with the mustard, squeezed lemon juice. Season the dressing to taste with more lime juice, salt, and pepper.
